The Airmail was first created in Havana, Cuba around 1949 when airmail became a more common and efficient way to communicate. This easy-to-drink cocktail is considered to be the Caribbean version of the classic French 75 as it balances rum, lime juice, and honey.
Ingredients:
- 1 1/2 oz Rum
- 3/4 oz Lime Juice
- 3/4 oz Honey Simple Syrup (1 part honey, 1 part water)
- 1 oz Champagne
- Lemon (for garnish)
