The Airmail was first created in Havana, Cuba around 1949 when airmail became a more common and efficient way to communicate. This easy-to-drink cocktail is considered to be the Caribbean version of the classic French 75 as it balances rum, lime juice, and honey. 

 

Ingredients:

  • 1 1/2 oz Rum
  • 3/4 oz Lime Juice
  • 3/4 oz Honey Simple Syrup (1 part honey, 1 part water)
  • 1 oz Champagne
  • Lemon (for garnish)

Tools You’ll Need:

Preparation Steps:

  1. Combine Rum, Lime Juice, and Honey Simple Syrup in a shaker filled with ice and shake.
  2. Using a Hawthorne strainer, strain into a Champagne Flute
  3. Top with Champagne.  
  4. Garnish with a Lime Twist.
