The first step in making a Sazerac involves rinsing the glass with absinthe and then discarding the remaining liquid. Absinthe, once referred to as ‘Green Fairy’ for its mysterious green color and ‘Black Death’ for its licorice-like taste, can have an overpowering flavor even when consumed in very small quantities. Therefore, it is used sparingly in the Sazerac to give this classic cocktail its distinct flavor. While New Orleans has several cocktails to its credit, the Sazerac is definitely a standout.

  2. Rinse the glass with Absinthe, then discard. 
  3. Combine remaining ingredients in mixing glass filled with ice. 
  4. Stir rapidly with a mixing spoon to chill.
  5. Using strainer, pour contents of mixing glass into the glass. 
  6. Garnish with a Lemon Twist.
