Tart and slightly sour, this Honey Sage Bourbon Sour is a spin off of a classic Whiskey Sour with an unexpected herbaceous twist. The earthy sage flavor balances agreeably with the caramel and spice undertones of the bourbon. The foamy top layer is thanks to the egg white and lemon juice, a staple in any classic sour recipe. If you’re uncomfortable working with egg whites or have a vegan diet, you can always use aquafaba as a substitute.

 

Ingredients:

Honey Sage Bourbon Sour

Honey Sage Syrup

  • ¼ Cup Honey
  • ½ Cup Water
  • 5 Sage Leaves

Cocktail

  • 2 oz. Bourbon 
  • 1 oz. Fresh Lemon Juice
  • ½ oz. Honey Sage Syrup
  • 1 oz. Water
  • 1 Egg White

Preparation Steps:

  1. To make Honey Sage Syrup, combine sage, honey, and water in a small saucepan over medium heat. Bring to a simmer and remove from heat. 
  2. Let the sage sit in the syrup for 30 minutes to 1 hour to infuse, then strain out the sage using a cone strainer
  3. To make the cocktail, carefully crack an egg and separate the egg white into a cocktail shaker. Discard the yolk and combine all remaining ingredients. 
  4. Dry shake for approximately 20 seconds to break up the egg white. 
  5. Add a handful of ice and shake vigorously for another 5-10 seconds until chilled. 
  6. Strain using a hawthorne strainer and pour into a coupe or rocks glass
  7. Garnish with a sage leaf.
