In our opinion, blackberry cocktails are great for any season! If you’ve never made a shrub before, we highly recommend it. This shrub cocktail embodies a trio of flavors that are show stopping: blackberry, mint, and lime. Those flavors infused together and accompanied by rum and club soda make a refreshing, slightly sweet cocktail that is great for a night in or to serve guests.

Cocktail Ingredients
- 2 oz. White Rum
- 1.5 oz. Blackberry Mint Shrub
- Club Soda
- Blackberries & Mint (for garnish)
Shrub Ingredients
- 10 Mint Leaves
- 2 Pints Blackberries
- 3 cups Sugar
- 3 cups Apple Cider Vinegar
- Juice from 2 Limes

Preparation Steps:
- To make the Blackberry Mint Shrub, heat vinegar and sugar over medium heat until the sugar is completely dissolved. Set aside to cool.
- In a glass jar or bowl with a lid, combine and muddle blackberries, mint, lime juice.
- Pour the vinegar mixture over the blackberry mixture, cover, and refrigerate overnight.
- Strain and store shrub in the fridge.
- To make your cocktail, fill your serving glass with ice.
- Pour your shrub into the glass, followed by the rum.
- Top with club soda and garnish with blackberries or mint leaves.
