Pomegranates are in season which means pomegranate cocktails! This tart yet sweet fruit juice paired with rosemary makes the perfect base for a spin on the classic margarita. Make this in large batches for holiday parties, or enjoy by yourself for a night in. Whatever you choose, you will not regret making this holiday margarita!

Ingredients:

Pomegranate Rosemary Margarita
  • 2 oz. Tequila
  • 2 oz. Pomegranate Juice
  • 1 oz. Orange Juice or Triple Sec
  • ½ oz. Lime Juice
  • ½ oz. Rosemary Simple Syrup
  • Rimming salt or sugar (if desired)

Rosemary Simple Syrup Ingredients

  • ½ cup sugar
  • ½ cup water
  • 3 rosemary sprigs

Preparation Steps:

  1. To make the Rosemary Simple Syrup, combine sugar and water in a saucepan and simmer over medium heat until the sugar is dissolved. Remove from heat and pour into a glass jar. Add rosemary and let infuse for at least 4 hours or overnight. 
  2. To make the cocktail, rim a rocks glass with a lime, then dip in rimming salt or rimming sugar depending on preference.
  3. Combine all ingredients into a shaker with ice and shake until chilled.
  4. Using a Hawthorne strainer, strain over ice into the glass. Garnish with fresh pomegranate seeds and a sprig of rosemary.
