We all love a classic Pina Colada over ice, but if you’re feeling adventurous and wanting to leave your guests more than impressed, try this clarified Pina Colada. Why clarified, you ask? When you clarify a cocktail, the acid from the milk creates a smooth creamy texture and delightful mouthfeel. This recipe makes two cocktails, but you can double or triple to batch for more guests.
Ingredients:
- 4 oz. Silver Rum
- 3 oz. Pineapple juice
- 1.5 oz. Lime juice
- 2 oz. Coconut milk
- 2 oz. Whole milk

Preparation Steps:
- In a shaker, combine silver rum, pineapple juice, lime juice, and dry shake to combine.
- In a bowl or glass measuring cup, stir together coconut milk and whole milk.
- Slowly pour in the rum mixture and stir a couple times. You will begin to see the separation from the acid meeting the milk.
- Cover and let sit for 30 min – 1 hour.
- Set up a straining station with a cheese cloth or coffee filter. Pour the mixture into the filter and strain into a bowl – the liquid should come out clear and may take up to an hour to fully strain.
- Serve directly over a large ice cube and stir with a bar spoon.
