This Boozy Thyme Lemonade is a refreshing, easy sipper with a citrus forward flavor. This cocktail recipe is a perfect combination of bubbles, citrus, and zest — reminiscent of a warm afternoon in the sun. Subtly sparkly and slightly sour, this cocktail is well rounded with the help of the herbaceous thyme, which holds its own without being too bold. If you’re short on time, you can muddle the thyme and add simple syrup to taste.

 

Ingredients:

Thyme Lemon Cooler
  • 2 oz. Gin
  • ½ oz. Thyme Syrup
  • 1 oz. Water
  • 1 oz. Fresh Lemon Juice
  • San Pellegrino Limonata
  • Lemon Slice (to garnish)
  • Thyme Springs (to garnish)

Preparation Steps:

  1. To make the Thyme Syrup, combine the water, sugar, and thyme sprigs in a small saucepan. Bring to a simmer and remove from heat once the sugar has dissolved. 
  2. To make the cocktail, combine the gin, thyme syrup, lemon juice, and water over ice in a shaker. Shake vigorously.
  3. Strain over fresh ice into a rocks glass
  4. Top with San Pellegrino Limonata
  5. Garnish with a lemon slice and fresh thyme sprig.
