The story goes that people would be told that Tom Collins is talking about them in a rough manner and calling them names, inciting people to seek him out – except that he didn’t really exist. The joke was all the rage at that time, songs were written about it and newspapers ‘reported sightings of Tom Collins.’ It was only a matter of time that a drink would be named after it too. A simple mix of ingredients, the Tom Collins is a perfect drink to enjoy whether you’re at home, at a speakeasy, or your neighborhood dive bar.

  • 2 oz. London Dry Gin
  • 1 oz. Lemon Juice
  • ¾ oz. Simple Syrup
  • Club Soda
  • Lemon Twist (to garnish)

  2. Combine Gin, Lemon Juice, and Simple Syrup in a shaker with ice and shake. 
  3. Strain into glass over fresh ice, then top with Club Soda.
